Peanut Butter Chocolate Chip Oatmeal Bars

Soft and chewy and full of peanut butter flavor. These bars satisfy that sweet craving.

Ingredients

  • 1/2 cup packed brown sugar
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla
  • 1 cup whole wheat flour
  • 1 cup old-fashioned oats
  • 1/4 cup unsweetened coconut
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened almond milk
  • 1/4 cup dark chocolate chips or chunks
  • 1/4 cup peanut butter chips

Instructions

  • Preheat oven to 350 degrees.
  • Spray an 8x8 baking dish with nonstick spray.
  • With a stand mixer fitted with a paddle attachment (or a hand mixer), mix the brown sugar and peanut butter on medium speed until light in color, about 3 minutes.
  • Add in the vanilla and scrape down the sides after mixing.
  • Add in the flour, oats, coconut, baking soda and salt. (The dough will be very clumpy but will come together in the next step).
  • Slowly add the milk in a steady stream, mixing until a dough forms. Fold in chocolate chips and peanut butter chips. You may need to use your hands to get everything to fully combine.
  • Press the combined dough into the prepared baking dish.
  • Bake for about 18-20 minutes until the bars are just turning golden.
  • Allow to cool completely in the pan, then cut into squares.

Notes

Bars can be stored up to 2 weeks.
Regular milk can be substituted for almond milk in this recipe.
These bars can be made vegan if you substitute dairy-free chocolate chips and omit the peanut butter chips.
