What I Eat: A Day In The Life

One question I get asked often when it comes to my health is what I eat on a daily basis.  I’m always fascinated by what people eat; especially people that are super healthy and fit.  You know that section in some magazines where a celebrity shares what they eat during the day?  That is my jam article right there.  I know, I’m a total nerd.  But it’s motivating to me to see what fit people eat.  It makes me want to eat healthier myself.

I strive to do my best when it comes to eating well, and to fuel my body with proper nutrition.  Yes I have cheat days, and times where I struggle, but I don’t let that derail me from my continued healthy eating lifestyle.

So I thought I would share with you what I typically eat in a day (no pretty photos, sorry).  It’s pretty basic and I don’t spend hours slaving away over a stove to make the perfect meal.  I stick to basics and usually add flavor with spices.

Here is what I eat on any given day.

Breakfast

I love breakfast.  I think it may be my favorite meal of the day.  But I don’t typically stray from my go to foods.  So for breakfast I usually have 2 eggs, sprouted grain toast with half an avocado.  I love avocado toast.  Whatever doesn’t get spread on the bread still goes on the plate.  I eat at least half of an avocado every day to get my healthy fats.  

I’ll vary this up a bit by making a scramble with 1 egg and a 1/3 cup of egg whites, 2 slices of turkey bacon, a handful of spinach and a little cheese.  Super quick to whip up.  And I’ve found this to be one of the only meals that will keep me full for a decent amount of time.

Lunch

Lunch is my wild card meal.  If we meal prep, it’s usually 4 ounces of chicken, brown rice and 2 cups of veggies.  If we aren’t meal prepping (which we haven’t been lately since Kellen has been traveling so much), I kind of eat whatever.  I’ve been on a big yogurt kick lately, so I’ll eat about a cup of veggies, then have 1 cup of plain Greek yogurt with a bit of honey and homemade granola.  It is my jam.  I’ll also eat this as a snack sometimes.

I also like the chicken burger patties from Costco, so I’ll heat up one of those with some cheese and the other half of my avocado, with veggies on the side (zucchini this day).  

Dinner

Our dinners always consist of the same three things: veggies, protein and a complex carb.  I know some people say don’t eat carbs with dinner, but we always eat a complex carb like brown rice, quinoa or sweet potatoes.  On this day we had a big spinach salad with blueberries and avocado (oil and balsamic vinegar for the dressing), with chicken and a quinoa/brown rice mixture.  I try to fill up my plate with as many veggies as possible and make that the biggest part of my meal.

We also love stir fry.  So Kellen will make a chicken stir fry (will sometimes vary this up with pork or steak), with veggies, and quinoa and brown rice on the side.  Super easy to make, is filling and tastes great! Tacos are another favorite, with chicken, peppers, black beans and multi-grain wraps.

Snacks

I’m a big snacker.  I have always been someone who has to eat every few hours.  You should have seen my lunch bag when I worked at an office.   I’ll usually have a snack between breakfast and lunch, then again between lunch and dinner (sometimes two snacks depending on what time we will be eating). 

My snacking also depends on my workouts.  If I do my workout before a major meal, I won’t snack and instead have my meal with a larger portion of protein to aid in muscle recovery.  But if I do my workout say after lunch, I’ll have one of these healthy post workout snacks (usually a protein shake, smoothie, Greek yogurt or an apple with peanut butter).

I also keep a batch of my no bake energy bites on hand for a quick on the go snack.  Rice cakes with peanut butter are another favorite, as well as my Greek yogurt, honey and granola combo.  I also snack on veggies like carrots and cucumbers, as well as raspberries and blueberries.  Those are our go to fruits and veggies that we always have on hand.

Drinks

Water, coffee and wine.  That is all.  No soda, no diet soda, no beer.  If you like beer, go for it, but it makes me bloated so I almost never drink it.  I have a glass of water right after I wake up in the morning to get my body moving and hydrated after 7 hours of sleep.  Then I have a cup of coffee (decaf) with a splash of half and half and 1 Stevia packet.  Then 16 ounces of water, then sometimes I’ll have a second cup of coffee (decaf) and will continue with water throughout the day.

I will have a glass of wine 2-3 nights a week.  Usually red but I like white in the summer.  

And that’s basically it!  This isn’t all that we eat.  We like soups, I love using the Crock Pot in the winter months and sushi is our go to meal out.  But most of the time this is what you will find on our plates.  Nothing too fancy but it tastes good and helps keep me full.  It also gives me the fuel I need to get through the day and have a good workout.

    Your stir fry looks delicious! I have egg whites almost everyday with my breakfast and love them! I have to do a better job upping the veggies and having less carbs with lunch and dinner!

    Do you seriously eat that healthy?! I consider myself a healthy eater, but there’s no way I want to eat chicken and brown rice all the time! Ha

    I need to snack more. I tend to make popcorn and then get lazy and have more popcorn for dinner. 🙁

    I love a good stir fry or a taco salad with all the veggies. I like my morning coffee with a splash of creamer… that’s just something I’m not willing to give up. But I’ve decided not to allow myself to have a glass of wine in the evening unless I’ve walked or ridden my bike for the day. I guess I’m 3 and need to bribe myself. 😉

    Yum! It all looks delicious! I almost can’t ever get an avocado because my girls eat them before I get to them! We do a lot of spinach like that too. I have a glass of wine maybe 1-2 nights a week and Kevin thinks it’s too much :-/ ugh. I do love your no bake energy bites! I think it’s time for me to make them again!

    I love this Tiffany! I’ve been trying to watch what I eat but man *shakes fist at Christmas baking* it’s hard at this time of year!

    I’m hoping to switch to completely clean eating (exception: wine and coffee) again by mid-January. Oh – my- goodness is it ever tough. I’m grumpy. Anything to recommend to take away the grumps?! lol
