Happy Monday! Apologies for my absence around the blog as of late! I participated in a blogging staycation this weekend and it was fantastic! I met some wonderful bloggers and got some much needed work done for A Touch of Grace. I learned about some great tools and got even more inspiration for where I want to take this blog in the future! Those types of weekends are the best! We also had a great family day yesterday at the beach. Even though it was overcast it’s still fun to play in the sand and skip rocks.
It has been a sweet forever since I shared a recipe that wasn’t a baked good. You can obviously see where my passion lies. 🙂
But I couldn’t not share this delicious and easy recipe with you. Tuesday and Wednesday evenings before pay day are our “what do we have in the fridge that we can put together for dinner” nights. We try to clear out as much as we can before we go grocery shopping again. I hate for food to go to waste and I know if we shop before we consume last week’s veggies, they will get shoved to the back of the crisper drawer and go bad.
This lettuce was heading in that direction. We bought a Costco size bag of romaine hearts for lettuce wraps with the intention of making shrimp lettuce wraps and using them in smoothies. And then we didn’t.
But the other night we had the idea of doing a BLT type sandwich, and Huebie suggested we use the lettuce and make wraps instead. Light bulb! These little wraps are so good and very filling.
Guacamole Chicken Bacon Lettuce Wraps
Ingredients
- 1 bunch Hearts of Romaine lettuce
- 5 Strips bacon
- 4 Cups cooked chicken chopped
- 1/3 Cup guacamole You can make your own or use pre-made.
- 1/4 Cup grated cheese
Instructions
- Cook chicken and bacon before starting to put the wraps together.
- Spread the guacamole into the piece of lettuce.
- Top with bacon, chicken and shredded cheese.

I’ve been looking for something new for dinner for this week and those look great! I try to use everything up in our fridge every week too and ended up making a cheese soup with two different kinds of cheeses and serving it over broccoli, just to get it all out of there.

These look SO yummy! What a great idea! I know what you mean…we have this thing that we do around our house called “must-go soup” where everything in the refrigerator must go! It is so much fun and GOOD-tasting, too! Like if we have leftover spaghetti sauce or mamwich or chili or gravy, I use that as the base, then add any veggies (leftovers or fresh that are about to go bad), and even leftover macaroni and cheese, that sort of thing. I put it all together and make “must-go soup”. It probably sounds awful, but it really quite delicious!
