Happy Monday! Apologies for my absence around the blog as of late! I participated in a blogging staycation this weekend and it was fantastic! I met some wonderful bloggers and got some much needed work done for A Touch of Grace. I learned about some great tools and got even more inspiration for where I want to take this blog in the future! Those types of weekends are the best! We also had a great family day yesterday at the beach. Even though it was overcast it’s still fun to play in the sand and skip rocks.
It has been a sweet forever since I shared a recipe that wasn’t a baked good. You can obviously see where my passion lies. 🙂
But I couldn’t not share this delicious and easy recipe with you. Tuesday and Wednesday evenings before pay day are our “what do we have in the fridge that we can put together for dinner” nights. We try to clear out as much as we can before we go grocery shopping again. I hate for food to go to waste and I know if we shop before we consume last week’s veggies, they will get shoved to the back of the crisper drawer and go bad.
This lettuce was heading in that direction. We bought a Costco size bag of romaine hearts for lettuce wraps with the intention of making shrimp lettuce wraps and using them in smoothies. And then we didn’t.
But the other night we had the idea of doing a BLT type sandwich, and Huebie suggested we use the lettuce and make wraps instead. Light bulb! These little wraps are so good and very filling.

These look so delicious! I can’t wait to try them! I want to hear more about the blogging staycation- sounds fun!
I don’t think I could be more hungry right now if I wanted to be…this looks incredible!! Pinning to make soon! xo, Biana – BlovedBoston
Oh my gosh! These look delish and the fact that they’re easy makes this recipe even better! And added bonus–my no-carb eating husband can have it as well! Thanks for sharing!
YUM! You had me at guacamole!
Great photos – I want to pick one up and taste it. 🙂 These are perfect for one our busier nights when the little one’s next session of swim lessons start. Pinning!
I’ve been looking for something new for dinner for this week and those look great! I try to use everything up in our fridge every week too and ended up making a cheese soup with two different kinds of cheeses and serving it over broccoli, just to get it all out of there.
Thanks for sharing!

Broccoli cheese soup is one of my favorites! So yummy!!
Oh man. I need these in my life. NOW.
Seriously how good do those look?!??! Low carb but delicious!!!
These look SO yummy! What a great idea! I know what you mean…we have this thing that we do around our house called “must-go soup” where everything in the refrigerator must go! It is so much fun and GOOD-tasting, too! Like if we have leftover spaghetti sauce or mamwich or chili or gravy, I use that as the base, then add any veggies (leftovers or fresh that are about to go bad), and even leftover macaroni and cheese, that sort of thing. I put it all together and make “must-go soup”. It probably sounds awful, but it really quite delicious! Thank you SO much for your sweet comments on my blog…it meant so much to me tonight. 🙂 God bless you!
These look yummy. Also, I am envious of your blogger staycation. I wish I had more ways to share ideas and tips with fellow writers.
As always, these sound and look absolutely delicious. Gotta add them to my list!! I could eat a lot of these, lol. ((thumbs up))
Mmmmmm. I love lettuce wraps of all kinds! These look especially delicious though (and they fit with my “cutting back on wheat” way of eating).
Thanks so much for sharing.
This is an excellent idea! I put my chicken salad in a lettuce leaf last night so same concept. I’m totally making these and Kevin will love it!
YUM!! Thanks for sharing this recipe, Tiffany! Pinned 😉
These look wonderful, Tiffany! I think even my picky son would eat these. Pinning! I did the blog staycation too. It was awesome :).
