Lentil Soup

Until Monday evening, I had never had lentil soup in my life.  Never.  But for some reason I really wanted to make lentil soup.  So that is what I did.  And it was perfect after a 4 mile run in 40 degree weather.  BRRRR it was cold!

I was a little concerned with cooking the lentils as the package said, 15-20 minutes, because I’d seen some recipes that were in the Crock Pot, so to me that meant they needed to be cooked longer.  We didn’t have time to Crock Pot the soup so I just went with the package and added time as we went until the lentils started to fall apart.

I was pleasantly surprised with this recipe.  I was worried the lentils wouldn’t taste very good but I liked the flavor of the soup.

Like I said, I followed the package and added about 10 minutes onto the cook time.

Ingredients:

1 tablespoon olive oil

3 medium carrots, peeled and chopped

2 ribs of celery, chopped

1 medium onion, chopped into small pieces

2 cloves garlic, minced

2 cups dry lentils, rinsed

1 bay leaf

1/2 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper (or more for taste)

6 cups low sodium chicken stock

Directions:

– In a Dutch oven (or medium saucepan if you don’t have a Dutch oven) heat olive oil over medium heat for 2 minutes.

– Add carrots, celery, onion, garlic and salt, stir to combine and let cook, covered, for 5 minutes.

– Add lentils, bay leaf, thyme, pepper and chicken stock.  Stir and bring to a boil.  Reduce heat to low, cover, and let simmer for 20-25 minutes, or until lentils start to fall apart.

I love simple yummy recipes like this in the fall.  Lentils have a ton of fiber and protein as well so it’s a heart healthy meal.

    I think this is my absolute favorite soup! I grew up eating it and actually made it myself for the first time a couple of weeks ago. My husband doesn’t care for it, but I froze a couple of containers and they were lifesavers for lunch this week! I always add in brown (or white) rice, but everything else looks about the same!

      That’s awesome Carly! I think next time I’ll add rice as well; I’ve seen a few recipes like that before. It keeps so well too. Loved having it for lunch yesterday.

      Funny you say cornbread because I almost made cornbread to go with it! I kept asking my hubby if he wanted it and he was wishy washy about it. I wish I had but definitely will the next time around.

    Yum! I love lentil soups 🙂 My dad fed us lentils all the time growing up. I’ll have to make this recipe. And I do NOT run outside if it’s below 60. You’re brave!

      HAHA. I don’t run outside if it’s above 60. 🙂 I actually felt like I had a better run b/c it was colder and I wasn’t sweating my face off. I hate being overheated.

    Ohhhhh love love love!! I am a soup freak and this is one of my favorite soups, ever!! My mom makes the best Lentil soup and Mazto Ball soup. If ya ever get lazy and don’t feel like making it, but still want to eat it, ANNIE’S Organic canned Lentil soup is really good too. I eat that a lot. It’s not the same as homemade, but it’s still really good! One of my favorites! 🙂 But yeah, homemade LENTIL SOUP IS AWESOME! 🙂 I will try your recipe. And KUDOS TO YOU for running so far in the cold, omg, I would have fallen over in frost bite!! ha! ha!!! 😉

      Are you Jewish? My boss and a co-worker are Jewish and make some awesome Mazto ball soup. I will have to try the Annie’s. We love Annie’s in our house.

        No, but my mom is intrigued by the Jewish religion since Jesus was Jewish. She goes to a regular Baptist church on Sunday and then, also, a Christian Jewish temple on Saturdays. The are Christian Jew’s at the temple, if that makes sense. It’s neat!! So, she learned how to make Matzo Ball soup a long time ago and WOW! She makes it amazing. They also used Lentils a lot in the Bible days. They are supposed to be really good for you. There are red Lentil’s, green Lentil’s and dark Lentil’s… and I want some now!! 🙂 Yum!

    I’ve had the lentils just once! I added them to noodles and I put too much pepper by accident and we still enjoyed it. I would love to try them in a soup one day. This looks delicious and perfect for the weather these days.
