Cranberry Banana Bread

This cranberry banana bread is the perfect compliment to your holiday gathering. 

Have you ever had leftover ingredients from a recipe and you aren’t sure what to do with, but you don’t want to go to waste?   That was me and cranberries this year.  I bought 2 bags and only used one to make the cranberry sauce.  I know they aren’t expensive, but I didn’t want to just throw the bag away.  So I made some bread.

And it’s really good.

This cranberry banana bread is the perfect compliment to your holiday gathering. 

 

The combination of bananas and cranberries may sound weird, but they complement each other perfectly.

 

*** This recipe makes 2 large loaves.  

Ingredients:

* 1 cup unsalted butter
* 3 eggs, room temperature
* 2 egg whites
* 1 teaspoon (plus a little extra) vanilla
* 1 cup brown sugar
* 1 cup granulated sugar (plus 1 tablespoon for the cranberries)
* 6 rip bananas, smashed
* 3 3/4 cups flour
* 1 teaspoon salt
* 2 teaspoons baking soda
* 1 teaspoon baking powder
* 1 cup buttermilk
* 2 cups fresh cranberries, rinsed and minced
 
Directions:
* Preheat oven to 350 degrees.  Grease 2 large loaf pans.
* Put cranberries in food processor and pulse until finely chopped (or you can mince them by hand)
* Place cranberries in small bowl and coat with 1 tablespoon sugar.  Mix gently.
* In a medium bowl, sift together flour, baking soda, baking powder and salt.
* In large bowl, or stand mixer with paddle attachment, beat butter and sugars until fluffy.
* Add eggs one at a time, mixing to combine after each addition.  Add egg whites and mix.
* Blend in vanilla.
* Add mashed bananas and mix until fully combined.
* Add dry ingredients in 3 additions, alternating with the buttermilk.
* Fold in the cranberries.
* Fill loaf pans and bake 1 hour-1 hour 10 minutes, until toothpick comes out clean.
* Let cool in pans on wire rack for 20 minutes, then remove from pans to cool completely.

You could also make this cranberry banana bread into muffins for an easy to grab breakfast or snack.

    This looks so good Tiffany!

    It’s funny because in October we did the 5 in a Row book – Cranberry Thanksgiving. At the end of the book there’s a recipe for cranberry bread. We made it but I was disappointed because it had an overwhelming orange taste. Banana would be spectacular.

    Such a great way to use up the cranberries! I think they give such a great tart but sweet flavor to so many things!

      I was worried the bread would be a bit too tart, but not at all. The sugar mellows the tartness out.

      I hope you like it! The hubs says this is his new favorite recipe. I may make it again next week for Christmas. Maybe try some strudel topping for festiveness. 🙂
