Zucchini Chocolate Chip Muffins, Muffin #4

First I just want to say that I’m so glad so many of you are loving this muffin series!  I’ve gotten so much great feedback either by comments on the blog or via email.  Thank you all for your sweet words and for actually trying my recipes!

For today’s muffin, I wanted to do an update to an old favorite recipe of mine.  I love finding ways to add veggies into muffins.  And while these zucchini chocolate chip muffins aren’t the healthiest per se, they do pack a heavy helping of zucchini.

I knew I wanted to make zucchini muffins as part of this series.  I love my zucchini bread recipe, but didn’t think it would translate as well as I would like into muffins.  It’s a dense bread and I wanted these muffins a bit lighter.  And I love the way chocolate chips and zucchini pair together.  But let’s be honest, I like the way chocolate chips pair with most muffin recipes. 🙂

If you’re looking for an easy way to finely grate your zucchini, use a food processor.  I over did mine a bit, but I think it blended really well this way into the muffins.  Plus it’s just so easy to do and takes much less time than hand grating.

Zucchini Chocolate Chip Muffins

Ingredients

  • 1 1/2 Cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 Rounded teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 3/4 cups chocolate chips
  • 1 egg, beaten
  • 1/2 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 Teaspoons vanilla
  • 1 1/4 Cups grated zucchini (about 1 large)

Directions

Preheat oven to 350 degrees. Spray muffin tin with non-stick cooking spray, or line with cupcake liners.
In a large bowl, combine all the dry ingredients, including the chocolate chips. Set aside.
In a medium bowl, mix together the beaten egg, both sugars, oil and vanilla. Fold in the zucchini.
Pour the wet ingredients into the dry ingredients and mix with a spatula until just combined, making sure to not over mix.
Distribute batter evenly among the 12 muffin cups. They should be about 2/3 of the way full.
Bake 16-20 minutes, or until toothpick inserted comes out clean.
Let cool in the pan on a wire rack for 5 minutes, then remove the muffins from the pan to the wire rack to cool completely.
Muffins are best served warm out of the oven, but can be stored in an air tight container up to 5 days, or frozen up to 3 months.

    Hi Tiffany, every time I see a muffin recipe I say I must give it a go and never have. I cook, I bake but I have never made muffins before. I have made zucchini bread before though (mainly out of curiosity), and was pleasantly surprised.

    These muffins sound interesting too and maybe one day I’ll actually get around to making some.
